Brine @brine.singapore- Big - Dashi Risotto, Mushroom Textures (S$17) 🥄•ACAMASEATS & GTK: Christmas is just 14 days away and it looks a lot like Christmas nowadays especially with this particular dish. Which invokes an Autumn Christmasy feel and the play with the textures of mushrooms are pretty brilliant. An umami bomb by itself, flavourful, mushy, creamy but the rice was not plump and al dente enough..Mushrooms Textures; Shimeji mushrooms was cooked with the aged carnaroli rice, topped with dehydrated enoki and shiitake mushrooms was shaved generously that provides a deep earthy flavour. The Hideout @thehideout.sg- HOSTED TASTING - Pork Knuckle (S$28) served with Sauerkraut, Potato Wedges, Gherkin, Honey Mustard seed sauce and Red Wine sauce.•ACAMASEATS & GTK TIPS: Hidden within the Crackling Pork skin are glistening juicy chunks of meat that goes hand in hand with the accompanying sauces. The Honey Mustard was a tad on the sweeter side, missing the kick that a Mustard should have. The broth is pretty mind blowing, rich in beef and herbs, really umami. Normally I prefer dry noodles but one just can’t pass the soup version here. Simply one of the best Beef Noodle Soup so far. 🤤.There isn’t any funky beefy smell and the ingredients used are fresh, my favourite will be the beef ball - unlike any others, try and you’ll know why. Joo Bar @joobarsg- ‘Anju’ Drinking Snacks - Joo Grilled Squid (S$20) Korean Squid, Gochujang Mayo, Lime. 🦑•ACAMASEATS & GTK: Grilled well as the texture isn’t too rubbery but still provides the occasional snap as you bite it. The seasoning on the squid with a drizzle of lime is good enough on its own hence the Gochujang Mayo acts as a supporting character, truth be told most only remember the main cast..My only gripe is that the squid could be grilled a little longer for a crispier edge with a smoky finish but there’s a risk to pay which is sacrificing its perfect texture for a grilled squid. So you see, humans are naturally greedy sometimes you can’t get the best of both worlds so appreciate what is served to you..Most of the time it’s the company that makes the food taste so much better. To share a meal together is an invitation of being in one’s family. The play on textures are pretty brilliant, frozen coffee brings a little milkiness with a hint of coffee, vanilla filled profiteroles tasted average and the chocolate shard unfortunately didn’t bring much chocolaty notes to the dessert..The Banana & lavender ice cream sandwich reminded me of Esquina’s iconic “BBC” with different textures of bananas, but here you have banana cake alongside banana slices with fragrant and smooth lavender ice cream. Long Beach Seafood - Classic Signature Chili Crab (S$78/kg) Dungeness Crab (1st Pic)VsJumbo Seafood - Chilli Crab (S$99/kg promo price) Alaskan King Crab (2nd Pic) 🦀 .•ACAMASEATS & GTK TIPS: I’ve tried both versions of the iconic chilli crab from these two establishments a handful of times and I personally prefer Long Beach Seafood version hands down. It’s more flavourful, the chilli packs more punch, the sauce is thicker compared to the watery one from Jumbo and overall it has more character and oomph. 🤤.This actually translates to most of the dishes when one compare the two restaurants. Long Beach Seafood pays more attention to the presentation, ingredients and the overall cohesiveness of the flavours.
