Why haven't I been using savory waffles for my breakfast sandwiches????? 😛It's such a fun idea and all things delicious with the right filling. 😏Was inspired after having such a sandwich at @psandco in Philly, but wanted to make my own. My sandwich has baked marinated tofu (soy sauce, rice wine vinegar, garlic powder, turmeric and smoked paprika -- just placed the marinated slices in the oven for 10-15 minutes at 400F), greens, hummus and tomato slices. The savory waffle recipe is listed below in case you are interested in making them, but feel free to use frozen waffles if you need the convenience or feel you'd rather not opt to buy a waffle iron. 👌🏽 . Savory Corn Meal Waffles 1/4 cup corn meal 3/4 cup white whole wheat flour or regular all purpose flour 1 tsp white Miso paste 1/2 tsp garlic powder 1/4 tsp turmeric 1 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 1 1/2 cups unsweetened almond milk 1-2 spring onion, minced 🌱 . Preheat waffle iron prior to starting batter. Mix together all dry ingredients in a medium sized bowl. In a small bowl whisk together miso and milk. Add wet ingredients and spring onion to dry ingredients and whisk together to combine. Allow batter to sit for 2-3 minutes. Open waffle iron and add 1/4 cup of batter to the center, but do not close waffle iron just yet. Allow to cook for about 2 minutes before closing waffle iron. Cook additionally for about 3 minutes or more depending on how your waffle iron functions. You want a fully cooked waffle before pulling it out of the iron. Place on cooling rack and repeat process with remaining batter. Was able to make 6 waffles using this batter. Use your waffles however you wish. I used mine for a sandwich, but you can top your waffle with tofu slices, sautéed spinach and mushrooms as well (hoping to try it that way soon). 🌱

Celebrating my latest blood results. Cheers to good health and being a better version of me!🍹 Only 9 months being vegan (I did cheat with cheese and fish a few times, I admit but overall been vegan), my dipped from 8.1 to 6.8 which is fantastic. in my future? 👶👍 - getting pregnant with a high A1C is never safe. My LDL (bad) cholesterol also dipped substantially and is at a perfect level, along with my blood pressure. Liver function is great, weight is perfect, no vitamin deficiencies and not anemic. Overall, looking and feeling good. All that, without even working out regularly, just eating well. 💪 #plantpowered
