Paleo Shepherd’s Pie for the Win🥧🏆 Serves: 4-8 servings With this recipe, I have turned the hearty Irish comfort food, Shepherd’s Pie, into a lighter and Paleo friendly version. I Use grass fed beef and grass fed spicy ground Italian sausage that I get at Earth Fare.. this spice gives it a little kick! Using ground turkey will make it even lighter. Ingredients: * 2 sweet potatoes * 1/8 cup Kerry Gold Irish Butter or Ghee * 1 1/2 teaspoons salt * 1 pound grass fed ground beef * 1/4 pound grass fed ground spicy sausage * 2 celery stalks, diced * 2 medium carrots, diced * 1/3 cup chopped sweet onion * 1 tablespoon Organic Muir Glen tomato paste * 2 teaspoons Worcestershire sauce * 1/2 cup Kettle and Fire Bone beef broth * 4 sprigs chopped thyme ( I grow my own) * 1 Bag frozen Cascadian Farms Sweet Peas Instructions 1. First, make the mashed sweet potatoes: 2. Cook and peel the sweet potatoes (I boil them, sliced in half and after the skins peel right off with a fork and knife) 3. Add 3 tablespoons butter and salt to the sweet potatoes 4. Mash them! 5. Cook the meat while the potatoes are boiling. When done, remove the meat but leave about 1 tablespoon of the drippings in the pan. 6. Add the chopped vegetables (onion, carrot, celery). 7. Cook the veggies in the drippings and 1 tablespoon butter. 8. Once the onions are translucent (about 5 minutes) add the tomato paste, Worcestershire sauce, beef bone broth, and thyme. 9. Let it all cook for 2 minutes. 10. Add the meat and stir until combined. 11. Add the frozen peas. 12. Put the meat/veggie mixture into a baking dish. 13. Spread the sweet potato mixture across the top of the meat 14. Bake in the oven at 350 for 20 minutes.

Who else uses an Instant Pot? 🙋🏼‍♀️I was reluctant to buy one but let me tell you it is the real deal —you can make almost anything in it! It’s a smart, multi-use programmable pressure cooker – it speeds up cooking by 2-6 times, uses less energy, and retains the nutritional composition of food! 👌🏻 • I’m a huge lover of Potato + Leek soup and the Instant Pot made it so beyond easy to make. 💃 Check out this recipe below by @cocomorante (you can also make on a stovetop if desired)! • Servings: 6 | Time: 30 minutes Ingredients: 4 medium leeks, dark green ends discarded 2 tablespoons extra virgin olive oil or butter 2 cloves garlic, minced ½ teaspoon kosher salt 2 large russet potatoes, sliced into ½ inch thick pieces 4 cups low-sodium vegetable broth (or chicken broth) ¼ teaspoon ground black pepper 1 bay leaf 1 tablespoon fresh lemon juice Optional: fresh spinach • Directions: 1. Cut the leeks lengthwise then slice crosswise into thin pieces; clean well under water (I used a colander to drain) 2. Select SAUTE on instant pot setting, add oil – then add leeks, garlic, salt and sauté for ~6 minutes or until soft 3. Add potatoes + broth + pepper + bay leaf, stir well 4. Secure Instant Pot lid – set pressure release to sealing – press CANCEL then select SOUP/BROTH – set cooking time for 5 minutes at high pressure 5. Once complete, let pressure release for ~15 minutes then switch pressure release to venting 6. Open pot lid, discard bay leaf, then add lemon juice – using an immersion blender, puree soup until smooth (can use regular blender as well, but be careful – it’s very hot)! 7. Ladle into soup bowls, top with fresh spinach, and serve with crackers (my fav are by @simplemills ) Enjoy! • • • • #organicmoments
